Chocolate (dairy-free and made with beans) Pudding! Yum!

Chocolate pudding without all the crap.

So if you are adventurous and want a dairy-free, processed-sugar-free chocolate pudding with nothing but goodness in it, this recipe is for you — or your child should it be requested for breakfast…

1 can black beans
1/4 cup cocoa powder — or more if you love it
5 tablespoons maple syrup – or to taste
1 tablespoon flaxseed meal – not the seeds
1/4 cup water
1 teaspoon of vanilla – at least!
dash of salt — brings out the sweetness
whipped cream/topping (optional)
cocoa powder or shaved chocolate for sprinkling on top of whipped whatever
1. Dump everything into a powerful blender/magic bullet.
2. Blend the bejeezus out of it to the consistency of pudding!
3. Spoon into lovely dishes – this is key!
4. Chill it until colder, like pudding.
5. Add topping for effect — and fun.
1. If you use black lentils, it will be awful. Trust Pump Mama.
2. For some it may take some getting used to, PM won’t lie.
3. But if you don’t tell them what it is first, folks will think it’s a dark chocolate pudding.
4. Drink lots of water because it is ALL fiber!
